Strawberry Feta Greens with Chicken

Sweet strawberries with salty feta and crisp garden fresh greens are topped with grilled marinated chicken breast and a zesty vinaigrette – a simple way to enjoy this season’s goodness.
Strawberry Feta Greens with Chicken:
2 chicken breasts
1 large bunch of spring greens
a handful of fresh strawberries – sliced
1/2 c. feta – crumbled
1/2 lemon – juiced
2 T. good olive oil
1 T. balsamic vinegar
freshly cracked black pepper
A day ahead: pound chicken breasts and place in an air tight container and top with your favorite marinade.
Preheat BBQ grill and set chicken out for about 20 minutes prior to grilling. Grill chicken for about 6 to 7 minutes per side, checking for doneness. Rinse greens and arrange on a plate. Slice strawberries and add to greens. Follow with a sprinkling of feta. For the vinaigrette dressing – squeeze half a lemon in a small bowl and whisk in olive oil and balsamic vinegar. Once the chicken is finished grilling, remove from grill, slice in strips and add to the salad. Drizzle with vinaigrette and top with freshly cracked black pepper.
