Avocado Bruschetta

A twist on the traditional bruschetta – creamy avocado and tangy lime mixed with sweet grape tomatoes and topped on crusty toasts make these a perfect summer entertaining addition.

Avocado Bruschetta:

2 ripe avocados – diced

1 pint grape tomatoes – quartered

1 lime – juiced

1 shallot – minced

1 garlic clove – minced

a pinch of salt

freshly cracked black pepper

Slice the avocados in half and score the insides with a small pairing knife. Using a spoon, gently removed the avocado from the shells into a medium bowl. Quarter grape tomatoes and add to the avocado. You can substitute cherry or roma tomatoes for this too. Add the juice from one lime, minced shallot and garlic. Stir until combined and season to taste with salt and pepper. Serve over toasted baguette slices.
