Blackcap Jammy Squares

My mother always made these for us while growing up.  It’s  funny how a taste will bring you right back to a particular time or day.  It almost seems like a waste to use an entire jar of grandma’s homemade jam in this recipe, but trust me – it’s worth it! Whole wheat flour and oats make these treats perfect for breakfast on the go…

Blackcap Jammy Squares:

3/4 c. butter – softened

1 c. brown sugar – packed

1  1/2 c. whole wheat flour

1 t. salt – omit if using salted butter

1/2 t. baking soda

1  1/2 c. oatmeal

1  8 oz. jar of blackcap jam or other fruit jam

Preheat oven to 400. Butter a 9×13 baking dish. I like to use the wax paper wrapper from the butter. Cream together butter and brown sugar.  Add flour a little at a time and continue blending.  Add baking soda and salt, then gradually add oatmeal. Press half of the dough in bottom of dish. Top with dollops of  jam – whatever you have on hand. Sprinkle remaining dough over jam and press lightly to cover. Bake for 20 minutes until golden. Cool and cut into squares.
