Spring Quiche

This morning I collected 6 eggs, spring fever is in the air! For any meal of the day, quiche is a simple go to that can be made with so many in season vegetables.  Asparagus and baby portabella mushrooms give this quiche an earthy flavor, perfect for spring and garden daydreaming.

Spring Quiche:

4 eggs – beaten

1/4 t. salt

1/4 t. ground nutmeg

2 c. milk

2 c. baby portabella mushrooms – sliced

10 spears of asparagus – steamed and sliced

2 shallots – minced

1 c. sharp cheddar cheese – shredded

Preheat oven to 425. Combine eggs, salt, nutmeg and milk in a large bowl. Mix in mushrooms, asparagus, shallots and cheddar cheese.  Lay homemade pie pastry into a pie plate and pour in quiche mixture. Bake for 15 minutes in preheated oven, then reduce heat to 300 and bake for an additional 40 to 50 minutes, checking periodically for firmness. Serve warm or chilled.
