Cherry Banana Date Loaf

A banana is another fruit that I enjoy on the greener side, without any spots please! I can’t think of a better use for ripe bananas than a hearty banana bread. Here is a twist on the traditional banana bread. I added dried cherries and dates for texture and depth in flavor.

Cherry Banana Date Loaf:

1/2 c. pitted dates

1/2 c. dried and pitted cherries

2 c. all-purpose flour

2 t. baking soda

1/2 t. salt

1/2 c. sugar

1 egg

3/4 c. milk

1/2 c. melted unsalted butter

1 ripe mashed banana

Preheat oven to 350. Chop dates and combine with cherries in a small bowl. Add a pinch of flour and shake and tap bowl on counter until the fruit is lightly coated. In a medium sized bowl, sift together remaining flour, baking powder, baking soda and salt. Add in the sugar and the fruit. In a small bowl, whisk together the melted butter, egg and milk. Fold into the dry mixture.  Butter a loaf pan and coat with cinnamon and sugar. Pour batter into prepared pan and sprinkle additional cinnamon and sugar on top. This makes for a nice crust. Bake in oven for 45 to 50 minutes. I check my breads with a toothpick to make sure they are baked through.

This is best served warm with a couple pats of butter.
