Ripe Pear and Lemon Pie

Pears are one of those fruits that I prefer crunchy, a little al dente in a way. These pears were past their eating stage for me, but just perfect for something baked. Sweet pears with fresh lemon baked in a butter pastry is great way to use up ripe fruit. 


Pastry:

2 c. all-purpose flour

3/4 t. salt

1/2 t. sugar

1  1/4 sticks chilled unsalted butter cubed

3 T. ice cold water

Every great pie starts with a good crust – flaky but strong enough to hold up to a pie server. I make my pastry dough in a food processor. This makes for an easy clean up and a lot less flour all over the counter.  Combine the flour, salt, sugar and pulse until combined and pea sized crumbs form. Add chilled water 1 tablespoon at a time and continue pulsing until the dough comes together and is moist. Form into a ball, wrap in plastic and chill in the refrigerator for about an hour.

Ripe Pear & Lemon Pie:

6 to 8 pears – peeled, cored and sliced

1/2 c. sugar

4 T. all-purpose flour

1/2 lemon juiced

1/2 lemon zest

Preheat oven to 400. In a medium bowl, combine pears, sugar, flour, lemon juice and zest gently with a spoon. Roll out pastry dough and lay it into a pie plate. If you have excess dough that hangs over the side of the plate, that’s fine.  This makes for a nice rustic galette-like crust once folded back up loosely. Pour pear filling into the pastry shell and fold up the dough over the filling leaving a round opening in the center. Brush pastry with an egg white and sprinkle with ground cinnamon and sugar.

Bake for 45 to 50 minutes. If the crust starts to brown early, cover with foil. Cool and serve with a dollop of homemade whipped cream.

Homemade whipped cream:

1 c. heavy whipping cream

2 – 3 T. sugar

1/2 t. ground cinnamon

Whip the cream, sugar and cinnamon on high with a hand held electric mixer or stand mixer with wire whisk attachment until the cream thickens and soft peaks form. Be careful not to over whip, you will have butter before you know it! There is nothing like homemade whipped cream.
